Muffins Anyone?

Yesterday, I decided to make some banana chocolate chip muffins! Bananas were on sale this week, so my mom thought it would be a good idea to buy three bundles cause why not, right? Well we still had some bananas leftover from the last grocery visit so we pretty much had a whole kitchen of bananas. The great thing with bananas, other than the nutrients they hold, is that they're "in season" year round! These muffins are easy to make and quite delicious! ;)

Muffins

  • 1 3/4 cups all purpose flour
  • 1 cup white granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 cup butter (melted)
  • 1/2 cup chocolate chips 
  • 3 ripe bananas (mashed)
  • 2 large eggs

Topping (optional)

  • 3 tablespoons melted butter
  • 1/4 cup white granulated sugar
  • 1/2 teaspoon ground cinnamon 
 
 

Procedure:
Preheat your oven to 350° F. Place all your dry ingredients (flour, sugar, baking powder, baking soda, salt, chocolate chips) in one large bowl and stir to combine. In a separate bowl, combine the wet ingredients (lightly beaten eggs, mashed bananas, melted butter, and vanilla extract).Slowly fold your wet ingredients into the dry ingredients until combined. Scoop the batter onto lined muffin tins and bake for about 25 minutes. Remove from the oven and let it cool for 5 minutes before you dig in!

 

Topping (optional):
Brush the melted butter on top of the muffins then dip into the cinnamon sugar mixture!

Tips:
- Let the butter cool before mixing it with the eggs
- You can add nuts or substitute for the chocolate chips 
- Don't over mix your batter - it will lead to a rubbery bread

 
 
 

Thursday Thoughts

I love reunions. Yesterday, one of my roommates from college came down to Atlantic City and today, my boss from Rutgers, who played a major role in my undergraduate career, also came down to meet up for lunch. Visits like these bring back so much nostalgia. It's crazy how the people you surround yourself with in college essentially become your second family - a home away from home. From my freshman year roommate to my senior year roommate(s), they all played a part of my home away from home, and I am grateful for them. I'm also grateful because I had the greatest job I could ever ask for in college. I worked with Intramurals for three years and I was surrounded by the sports I love, fitness, and a good group of people. It allowed me to grow as a leader and gain some long-lasting friendships. I also had the privilege to work for a man who truly cares about his students and still (to this day) continues to push me to grow as a person and become a better version of myself. That type of boss is hard to come by.
